Tasting Notes

Notes

Dehours & Fils Rosé "Oeil de Perdrix" Extra-Brut N.V is a light and refreshing sparkling wine composed of 80% Pinot Meunier and 20% Chardonnay. Crafted in the Champagne region of France, it is a unique style that offers a blend of bright fruit and ripe acidity. Its extremely low dosage of 6 g/L results in a refreshingly dry finish, making it perfect for pairing with seafood, charcuterie and light cheeses. Enjoy its pale hue and a nose of peach, cherry, and orange blossom aromas.

About the Producer

About the Producer

Dehours et Fils is a renowned Champagne producer based in the Marne Valley of the Champagne region in France. This family-owned estate has a rich history of winemaking, dating back to the late 19th century when Jules Dehours first established the vineyards.

Led by fifth-generation winemaker Jérôme Dehours, the estate is known for its commitment to crafting artisanal Champagnes that showcase the unique terroir of the region. The vineyards span across 42 hectares of premier Cru and Grand Cru sites, including Aÿ, Mareuil-sur-Aÿ, and Hautvillers, where the renowned monk Dom Pérignon once resided.

Dehours et Fils takes a sustainable approach to viticulture, practicing organic and biodynamic farming methods. The vineyards are meticulously cared for, with great attention given to each individual plot, allowing the grapes to develop their fullest potential. The result is grapes of exceptional quality, expressing the nuances of the terroir and reflecting the specific characteristics of each vintage.

In the cellar, traditional winemaking techniques are combined with modern innovation. The wines are crafted with minimal intervention, allowing the natural expression of the grapes to shine through. Extended aging on the lees adds complexity and depth to the final blends.

Dehours et Fils offers a diverse range of Champagnes, including both vintage and non-vintage cuvées. From their elegant and refined Brut Nature to their rich and opulent Grand Reserve, each Champagne showcases the distinctive style and craftsmanship of the estate.
